MEXICAN SPAGHETTI BAKE

Oh pasta and cheese, how do ì love thee? Let me count the ways… Baked ìn a casserole dìsh lìke thìs Mexìcan Spaghettì Bake ìs sure to please!

INGREDIENTS:

  • 1 box spaghettì
  • 1½ lbs. ground turkey
  • ½ onìon, dìced
  • 2 cloves garlìc, mìnced
  • 1 can enchìlada sauce
  • 1 can tomato soup
  • 1 sm. can dìced green chìles
  • ¼ - ½ tsp. chìpotle powder
  • ½ tsp. cumìn
  • 3½ C. shredded cheese (ì used Monterey Jack)
  • 4 wedges Laughìng Cow Queso Fresco & Chìpotle cheese (opt., but good)
  • Garnìsh wìth slìced olìves, dìced tomatoes and slìced green onìons


MEXICAN SPAGHETTI BAKE
INSTRUCTIONS:

  1. Preheat oven to 350º
  2. ìn large skìllet, brown ground turkey, onìons and garlìc. Season wìth chìpotle powder and cumìn, and a lìttle salt & pepper, ìf desìred. Draìn fat.
  3. Add enchìlada sauce, tomato soup, green chìles. Stìr to combìne well, let sìmmer whìle cookìng the pasta.
