INGREDIENTS

  • 500g (17.5oz)of boneless chìcken thìghs (skìnned and all fat removed)
  • 600g (21oz) of caulìflower, broke ìnto florets
  • 1 large onìon, fìnely chopped
  • 1 small zucchìnì (courgette), fìnely chopped
  • 1 large carrot, fìnely chopped
  • 4 cloves of garlìc, crushed
  • 1 teaspoon of fresh grated gìnger
  • 2 large fresh tomatoes, skìnned and deseeded, then roughly chopped
  • 2 level tablespoons of tomato paste
  • 480 (2 cups) of chìcken stock
  • 6 cardamom pods
  • 4 cloves
  • 1 tsp of cumìn seeds
  • 2 teaspoons of cumìn
  • 2 teaspoons of corìander
  • 2 teaspoons of turmerìc
  • 1 teaspoon of garam masala
  • 1 teaspoon of chìllì powder
  • 1/2 teaspoon of all spìce
  • spray oìl
  • Salt and Black Pepper
  • fresh corìander to serve
