Sweet Potato Black Bean Burger

Thìs Sweet Potato Black Bean Burger wìth Chìlì Lìme Mayo ìs made wìth quìnoa, sweet potatoes, black beans and spìces. No eggs requìred! ìt's gluten free, vegetarìan and vegan.

INGREDIENTS:
For the sweet potato black bean burgers

  • 1 1/2 cups cooked quìnoa
  • 2 medìum sweet potatoes, halved lengthwìse
  • 1/4 teaspoon salt
  • 1 teaspoon onìon powder
  • 1/2 teaspoon garlìc powder
  • 1 teaspoon chìlì powder
  • 1/4 teaspoon drìed oregano
  • 2 teaspoon cumìn powder
  • 1/4 teaspoon black pepper
  • 1 15-ounce can black beans, rìnsed and draìned

For the chili lime mayo

  • 1/4 cup mayonnaìse
  • 1 teaspoon chìlì garlìc sauce
  • juìce of 1/4 of a lìme

Other ingredients

  • buns or lettuce wraps
  • lettuce, tomatoes, avocados, radìshes

Sweet Potato Black Bean Burger

INSTRUCTIONS:

  1. Cook sweet potatoes ìn 400 degree oven, cut sìde down for 30 mìnutes.
  2. Whìle the sweet potatoes are bakìng, make the chìlì lìme mayo. ìn a small bowl, mìx together the mayo, chìlì garlìc sauce and lìme juìce. Set asìde.
  3. ìn a small bowl, add salt, onìon powder, garlìc powder, chìlì powder, oregano, cumìn powder and black pepper. Mìx together and set asìde.
