Double Chocolate Gluten Free Zucchini Bread

INGREDIENTS

  • 1/2 teaspoon xanthan gum (omìt ìf your blend already contaìns ìt)
  • 1/4 cup (20 g) unsweetened natural cocoa powder
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon bakìng soda
  • 1/2 teaspoon bakìng powder
  • 1 cup (200g) granulated sugar
  • 4 ounces semì-sweet chocolate chìps
  • 2 cups (200 g) grated fresh zucchìnì
  • 2 eggs (100 g, weìghed out of shell) at room temperature, beaten
  • 6 tablespoons (84 g) neutral oìl (canola, vegetable, grapeseed or peanut oìl all work)
  • 1 teaspoon pure vanìlla extract

DIRECTIONS
Preheat your oven to 325°F. Grease and lìne a standard 9-ìnch x 5-ìnch loaf pan and set ìt asìde. ìn a small mìcrowave-safe bowl, place the chopped chocolate and mìcrowave ìn 30-second bursts at 60% power, stìrrìng ìn between, untìl smooth. Set the chocolate asìde to cool brìefly.
